"Covid Quarantine and Bizarre Pantry Items" Quick Bread

Ingredients:

  • 1.5 cups of whatever jam you have on hand

  • 1/3 cup of olive oil

  • 1/2 cup of granulated white sugar

  • 1/4 cup of brown sugar

  • 1 large egg

  • 2tsps vanilla extract (I mean you can’t go wrong there right?)

  • 1.5 cups of flour (we used all purpose)

  • 1/2tsp salt

  • 1tsp baking soda

  • 1 &1/2tsp pumpkin pie spice or cinnamon (I mean why not?!)

  • 2 cups of roughly chopped walnuts (or any nuts you have - you can also omit them)

Steps

  1. Preheat oven to 350 degrees

  2. Grease a 9x5 loaf pan

  3. In a large bowl or the bowl that comes with your mixer beat your jam, oil, sugar, egg, and vanilla extract together.

  4. Add salt, flour, baking soda, and pumpkin pie spice or cinnamon. Stir well but don’t overdo it. Mix just until combined.

  5. Fold in nuts if using them. (Honestly, guys even if you are feeling desperate I wouldn’t use peanuts)

  6. Fold into your prepared baking tin.

  7. Bake about 50-60 minutes. Text with a shish kabob skewer til it comes out clean.

  8. Remove from oven and let cool in the pan for 5 minutes.

  9. Turn onto a cooling rack and let it cool if you can bear it otherwise rip it apart in chunks and eat it quickly to cope with the stress of social isolating. I suggest slathering it with large quantities of butter.
